Just move one of the staves. From the green toolbar, select the staff object, then click the staff you want to move (consort or demo version, right-click on a staff) to highlight the staff. Then move up or down. Press "ESC" when you're done to deselect the staff.

The demo mode lets you try all the consort edition features but won't save. The free solo edition only allows 2 staves. If you upgrade to the consort edition you can add more staves and also save. As you noticed, Musette treats the characters as text, not as notes. If you want to experiment before the next version is ready, you could edit the music font file to replace the oval noteheads with x noteheads.
